F325 and F371 Question and Answer Document

This Wisconsin Division of Quality Assurance (DQA) memo describes the F325 and F371 Question and Answer Document.

Two federal tags had significant changes in 2008. F326 was merged into F325 and F370 was merged into F371. The regulatory language remained the same for both tags. The revisions to tags F325 and F371 were made to provide clarification, explanation and examples for surveyors to reference. These changes were effective on September 1, 2008.

The "F325 and F371 Question and Answer Document" was developed in response to multiple questions that were submitted to DQA. It is a list of actual provider questions that were received, with answers provided by the Division of Public Health, Division of Quality Assurance and Centers for Medicare and Medicaid Services.

The purpose of the F325 and F371 Question and Answer Document is to:

  • Expand on information already provided in the DQA F325 Webcast on Nutrition and the DQA F371 Webcast on Sanitary Conditions (Located at: http://www.dhs.wisconsin.gov/rl_dsl/Training/dqaWebcasts.htm)
  • Offer clarity on food safety issues related to specific real-life situations
  • Give direction to providers and surveyors on F325 questions
  • Give direction to providers and surveyors on food safety issues
  • Provide factual information with the current standards of practice to assist providers in developing effective policies and procedures related to the prevention of food-borne illness and food safety
